Typically, a mildly acid coffee, light bodied but flavourful and aromatic. Peruvian are considered a good blending coffee because of its nice but understated character. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peru beans can be a dark roast but does not need to be. lighter or darker roast depends on the coffee roaster after the coffee has been farmed. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is in part due to the growing area & in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffees have a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the primary coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall & leggy low yield tree but provides excellent qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee cultivation area is at an elevation range of 1000 to 1,800 m.
