Usually, a mildly acid cup, light-bodied but flavourful and aromatic. Peruvian are known as a good blender because of its pleasant but understated character. The Cuzco region, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best grade is AAA.
Peru beans can be a dark roast but does not need to be. Light or dark roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is partly due to the farming location & in part impactged from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are produced at lower elevations.
Both coffee beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall & leggy small yield shrub but provides high qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee cultivation area is at an altitude range of 1,000–1,800 m.
