Typically, it is a mildly acid coffee, light bodied but flavourful & aromatic. Peru are thought of as a good blender owing to its nice but understated character. The Cuzco location, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roaster after the coffee has been produced. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating area and partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are grown at lower elevations.
Both beans have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the primary coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield tree but produces high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other varieties.
About 75 percent of the coffee farming area lies at an altitude range of 1,000 to 1,800 m.
