Generally, a mildly acid coffee, light-bodied but flavourful & aromatic. Peruvian coffee beans are known as a good blender because of its pleasant but understated character. The Cuzco region, especially the Urubamba Valley, also grows renound wet-processed coffee. The best level is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is partly due to the cultivating location and partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatra, are farmed at lower elevations.
Both coffees show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield shrub but produces great qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75% of the coffee farming area is at an altitude range of 1000 to 1,800 metres.
