Usually, it is a mildly acid cup, light bodied but tasteful & aromatic. Peru beans are known as a good blending coffee because of its nice but understated character. The Cuzco location, particularly the Urubamba Valley, also produces renound wet-processed coffee. The best grade is AAA.
Peruvian coffee can be a darker roast but does not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is in part due to the cultivating region and in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are produced at lower altitudes.
Both beans exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy low yield tree but produces great qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee farming area lies at an altitude range of 1,000 to 1800 metres.
