Typically, it is a mildly acid flavour, light bodied but tasteful & aromatic. Peruvian beans are thought of as a good blender due to its nice but understated attributes. The Cuzco region, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The highest grade is AAA.
Peru beans may be a dark roast but does not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is in part due to the farming location and partly impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatran, are farmed at lower altitudes.
Both beans have a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield shrub but provides high qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder being of other varieties.
About 75% of the coffee farming area lies at an elevation range of 1000 to 1,800 metres.
