Usually, it is a mildly acid coffee, light-bodied but flavourful & aromatic. Peru coffee are thought of as a good blender owing to its pleasant but understated attributes. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peru beans can be a dark roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is because of the farming region & partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield shrub but provides excellent qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75 percent of the coffee cultivation area is at an elevation range of 1,000 to 1,800 metres.
