Generally, a mildly acid coffee, light bodied but flavourful and aromatic. Peru coffee beans are thought of as a good blending coffee owing to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also produces renound wet-processed coffee. The highest level is AAA.
Peru coffee beans can be a darker roast but does not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been produced. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is partly due to the growing region & partly impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees have a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee farmed:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy low yield tree but provides great qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee farming area is at an elevation range of 1000 to 1800 m.
