Generally, a mildly acid taste, light bodied but flavourful and aromatic. Peru coffee beans are known as a good blender due to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peruvian coffee beans can be a dark roast but do not need to be. Light or dark roast is dependent on the bean roasting after the coffee has been produced. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is in part due to the farming location and in part impactged from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower altitudes.
Both beans have a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield plant but provides high qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75 percent of the coffee cultivating area is at an elevation range of 1000–1800 metres.
