Generally, a mildly acid taste, light-bodied but flavourful & aromatic. Peruvian coffee beans are known as a good blending coffee because of its nice but understated characteristics. The Cuzco region, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peruvian coffee may be a darker roast but does not need to be. lighter or darker roast depends on the coffee roasting after the coffee has been farmed. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is in part due to the growing region & partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans exhibit a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall & leggy low yield plant but produces high qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee cultivating area lies at an elevation range of 1000 to 1800 m.
