Generally, a mildly acid coffee, light-bodied but tasteful & aromatic. Peruvian coffee are thought of as a good blender owing to its nice but understated character. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a dark roast but do not need to be. Light or dark roast depends on the bean roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is in part due to the cultivating area & partly impactged from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatran, are produced at lower elevations.
Both coffees show a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy low yield tree but produces high qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivating area is at an elevation range of 1,000–1800 metres.
