Typically, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian coffee beans are known as a good blending coffee owing to its nice but understated characteristics. The Cuzco location, especially the Urubamba Valley, also produces renound wet-processed coffee. The highest level is AAA.
Peruvian coffee may be a dark roast but does not need to be. Light or dark roast depends on the bean roaster after the coffee has been farmed. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating location & in part influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatran, are produced at lower elevations.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield tree but provides great qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee cultivating area is at an elevation range of 1000 to 1,800 m.
