Generally, a mildly acid coffee, light bodied but tasteful & aromatic. Peru beans are known as a good blending coffee because of its pleasant but understated attributes. The Cuzco location, especially the Urubamba Valley, also grows renound wet-processed coffee. The best level is AAA.
Peru coffee can be a darker roast but does not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been grown. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is in part due to the farming area & partly impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatran, are grown at lower altitudes.
Both coffee beans have a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield plant but produces excellent qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75% of the coffee growing area lies at an elevation range of 1,000–1,800 m.
