Usually, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian are considered a good blending coffee because of its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peru coffee may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is because of the growing area & in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall & leggy small yield plant but produces excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75 percent of the coffee cultivating area lies at an altitude range of 1000–1800 metres.
