Typically, a mildly acid cup, light bodied but tasteful & aromatic. Peru beans are known as a good blender due to its nice but understated attributes. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peru coffee can be a darker roast but do not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the farming region & in part influenced from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffee beans exhibit a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield plant but provides high qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder are other types.
About 75 percent of the coffee cultivation area is at an altitude range of 1000 to 1,800 metres.
