Usually, it is a mildly acid flavour, light bodied but flavourful and aromatic. Peru are considered a good blender due to its pleasant but understated attributes. The Cuzco region, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peru coffee may be a dark roast but does not need to be. Light or dark roast is dependent on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is as a result of the growing region and partly influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffee beans exhibit a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield shrub but provides high qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee farming area lies at an elevation range of 1000–1,800 m.
