Usually, it is a mildly acid coffee, light bodied but tasteful & aromatic. Peruvian coffee are thought of as a good blending coffee because of its pleasant but understated attributes. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peruvian beans can be a darker roast but does not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the cultivating location & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatran, are produced at lower elevations.
Both coffee beans show a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee farmed:
- 70% of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield plant but provides high qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75 percent of the coffee farming area is at an altitude range of 1,000–1,800 metres.
