Usually, it is a mildly acid flavour, light bodied but flavourful and aromatic. Peruvian coffee beans are known as a good blender due to its pleasant but understated character. The Cuzco location, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peru coffee may be a darker roast but does not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is in part due to the growing region and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffees show a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield shrub but produces great qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivation area is at an altitude range of 1000–1,800 metres.
