Usually, it is a mildly acid cup, light-bodied but tasteful & aromatic. Peru beans are considered a good blender owing to its pleasant but understated attributes. The Cuzco region, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but does not need to be. Light or dark roast depends on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is because of the growing location & in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield shrub but produces great qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75% of the coffee cultivation area lies at an altitude range of 1,000–1800 m.
