Typically, a mildly acid taste, light bodied but flavourful and aromatic. Peru beans are considered a good blending coffee because of its pleasant but understated character. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The best grade is AAA.
Peruvian coffee beans may be a dark roast but does not need to be. lighter or darker roast is dependent on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the farming location and in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are produced at lower altitudes.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but produces excellent qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee cultivating area lies at an altitude range of 1,000–1800 m.
