Generally, a mildly acid taste, light-bodied but tasteful and aromatic. Peru are thought of as a good blending coffee owing to its pleasant but understated attributes. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peruvian coffee beans may be a dark roast but do not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been farmed. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the growing region & partly influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower altitudes.
Both coffees have a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall & leggy small yield shrub but provides excellent qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee growing area lies at an altitude range of 1,000–1,800 m.
