Typically, a mildly acid coffee, light-bodied but flavourful & aromatic. Peruvian are considered a good blending coffee owing to its nice but understated characteristics. The Cuzco location, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peruvian coffee may be a dark roast but do not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been farmed. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating area & in part impactged from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatra, are grown at lower elevations.
Both coffees exhibit a simple yet balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield plant but produces excellent qualities, typically quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75% of the coffee growing area lies at an elevation range of 1000 to 1,800 metres.
