Usually, it is a mildly acid coffee, light bodied but flavourful and aromatic. Peru beans are thought of as a good blender because of its nice but understated characteristics. The Cuzco location, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest grade is AAA.
Peru beans may be a dark roast but does not need to be. Light or dark roast depends on the coffee roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is in part due to the cultivating location & partly influenced from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatran, are farmed at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield plant but produces great qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee growing area is at an altitude range of 1000 to 1800 m.
