Typically, it is a mildly acid taste, light bodied but flavourful and aromatic. Peru coffee beans are thought of as a good blender owing to its nice but understated character. The Cuzco region, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing region and in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatran, are grown at lower altitudes.
Both coffees show a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but produces high qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee farming area lies at an elevation range of 1000 to 1,800 metres.
