Usually, a mildly acid coffee, light-bodied but tasteful & aromatic. Peruvian are considered a good blender because of its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peru coffee may be a darker roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is because of the growing region and in part influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatra, are grown at lower altitudes.
Both coffee beans show a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy low yield tree but provides high qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75 percent of the coffee farming area is at an altitude range of 1,000–1,800 m.
