Generally, it is a mildly acid coffee, light-bodied but tasteful & aromatic. Peruvian beans are known as a good blender owing to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest grade is AAA.
Peru coffee may be a dark roast but do not need to be. lighter or darker roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing region & in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are cultivated at lower elevations.
Both beans exhibit a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield plant but provides great qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee cultivation area is at an altitude range of 1,000–1800 m.
