Usually, a mildly acid flavour, light bodied but tasteful & aromatic. Peru are known as a good blender because of its pleasant but understated characteristics. The Cuzco location, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peru beans may be a darker roast but does not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been grown. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is as a result of the cultivating region and partly impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffee beans show a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy low yield shrub but produces high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee cultivating area is at an altitude range of 1000–1,800 metres.
