Generally, it is a mildly acid coffee, light-bodied but flavourful & aromatic. Peruvian beans are considered a good blender due to its nice but understated character. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peru coffee may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is because of the farming region & in part impactged from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are farmed at lower elevations.
Both coffees exhibit a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield plant but provides great qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75 percent of the coffee growing area is at an elevation range of 1000–1800 m.
