Usually, it is a mildly acid coffee, light bodied but flavourful and aromatic. Peruvian are considered a good blending coffee because of its pleasant but understated attributes. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian coffee can be a dark roast but does not need to be. Light or dark roast depends on the coffee roaster after the coffee has been grown. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the growing location & in part impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatran, are grown at lower elevations.
Both coffee beans exhibit a simple and balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the largest coffee crop:
- 70% of which is Typica (Typica is an original Arabica type which is a tall & leggy low yield shrub but produces great qualities, typically quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee cultivation area is at an altitude range of 1,000 to 1800 m.
