Generally, a mildly acid coffee, light-bodied but flavourful & aromatic. Peru coffee beans are known as a good blender owing to its pleasant but understated characteristics. The Cuzco region, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peruvian beans can be a darker roast but does not need to be. Light or dark roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is as a result of the growing area & in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffees have a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy small yield plant but provides excellent qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee growing area is at an elevation range of 1000 to 1800 metres.
