Generally, it is a mildly acid cup, light bodied but flavourful and aromatic. Peru coffee beans are considered a good blender because of its nice but understated character. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest grade is AAA.
Peruvian coffee can be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is because of the farming area & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower altitudes.
Both coffees exhibit a simple & balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain that is a tall and leggy small yield tree but produces great qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75% of the coffee farming area lies at an elevation range of 1,000 to 1800 metres.
