Usually, a mildly acid cup, light bodied but flavourful and aromatic. Peruvian coffee are considered a good blending coffee because of its nice but understated character. The Cuzco location, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peruvian beans may be a darker roast but does not need to be. Light or dark roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is in part due to the cultivating region & partly impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are produced at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield tree but provides excellent qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee farming area is at an elevation range of 1000–1,800 metres.
