Generally, a mildly acid taste, light bodied but flavourful and aromatic. Peru coffee are known as a good blending coffee due to its pleasant but understated characteristics. The Cuzco location, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best grade is AAA.
Peru coffee beans may be a darker roast but do not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is partly due to the growing area and in part influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are grown at lower elevations.
Both coffee beans exhibit a simple & balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the largest coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield tree but provides high qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the rest are other varieties.
About 75 percent of the coffee growing area lies at an elevation range of 1,000 to 1800 metres.
