Usually, it is a mildly acid flavour, light bodied but tasteful & aromatic. Peru are known as a good blender owing to its pleasant but understated characteristics. The Cuzco location, especially the Urubamba Valley, also grows renound wet-processed coffee. The highest grade is AAA.
Peru coffee beans may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is as a result of the growing region and in part influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatra, are cultivated at lower elevations.
Both coffee beans have a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee farmed:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield tree but produces great qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee cultivation area lies at an elevation range of 1000 to 1,800 m.
