Generally, it is a mildly acid flavour, light-bodied but flavourful & aromatic. Peruvian beans are known as a good blender due to its nice but understated characteristics. The Cuzco location, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peru beans can be a darker roast but do not need to be. lighter or darker roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing region & in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatra, are produced at lower elevations.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield tree but provides high qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivation area is at an altitude range of 1,000 to 1,800 metres.
