Generally, it is a mildly acid flavour, light bodied but flavourful and aromatic. Peru coffee are known as a good blending coffee owing to its pleasant but understated attributes. The Cuzco location, especially the Urubamba Valley, also produces renound wet-processed coffee. The highest level is AAA.
Peruvian coffee can be a dark roast but do not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is because of the farming region & in part impactged by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both beans have a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the primary coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but provides great qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee farming area lies at an altitude range of 1000–1,800 metres.
