Generally, a mildly acid coffee, light bodied but flavourful and aromatic. Peru are known as a good blender due to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also grows renound wet-processed coffee. The highest grade is AAA.
Peruvian coffee beans may be a dark roast but do not need to be. lighter or darker roast is dependent on the bean roaster after the coffee has been farmed. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is as a result of the cultivating region & in part impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffee beans show a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall and leggy low yield plant but produces great qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder are other types.
About 75 percent of the coffee cultivation area lies at an altitude range of 1,000 to 1,800 metres.
