Generally, a mildly acid cup, light-bodied but flavourful & aromatic. Peru beans are considered a good blending coffee because of its nice but understated attributes. The Cuzco location, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peru coffee beans can be a dark roast but does not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been produced. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing region and in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatra, are grown at lower altitudes.
Both coffee beans exhibit a simple yet balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall and leggy low yield shrub but provides excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the remainder are other types.
About 75 percent of the coffee growing area is at an elevation range of 1000 to 1800 m.
