Usually, a mildly acid coffee, light bodied but flavourful & aromatic. Peru beans are known as a good blending coffee because of its nice but understated attributes. The Cuzco area, particularly the Urubamba Valley, also produces renound wet-processed coffee. The highest grade is AAA.
Peruvian coffee may be a darker roast but do not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been farmed. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is because of the growing region and in part influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are grown at lower altitudes.
Both coffee beans show a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall and leggy low yield tree but produces high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75% of the coffee farming area lies at an altitude range of 1,000–1800 metres.
