Typically, it is a mildly acid flavour, light-bodied but flavourful and aromatic. Peru beans are considered a good blender because of its nice but understated character. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the cultivating area & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatran, are farmed at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy small yield plant but produces excellent qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder being of other varieties.
About 75% of the coffee farming area lies at an elevation range of 1,000 to 1800 metres.
