Usually, a mildly acid coffee, light bodied but flavourful & aromatic. Peru beans are thought of as a good blending coffee owing to its pleasant but understated attributes. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The best grade is AAA.
Peruvian coffee beans can be a dark roast but does not need to be. Light or dark roast is dependent on the coffee bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is because of the cultivating region and in part influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees show a simple yet balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee farmed:
- 70% of which is Typica (Typica is an original Arabica type that is a tall and leggy small yield plant but produces excellent qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75% of the coffee farming area lies at an altitude range of 1000 to 1800 m.
