Usually, a mildly acid taste, light-bodied but flavourful & aromatic. Peruvian are considered a good blender due to its nice but understated character. The Cuzco location, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian coffee beans can be a dark roast but does not need to be. Light or dark roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing location & in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatran, are produced at lower altitudes.
Both beans show a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield plant but provides high qualities, usually very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee cultivation area is at an elevation range of 1,000 to 1800 m.
