Generally, it is a mildly acid coffee, light bodied but tasteful and aromatic. Peruvian coffee beans are thought of as a good blending coffee due to its nice but understated attributes. The Cuzco region, especially the Urubamba Valley, also produces respected wet-processed coffee. The best level is AAA.
Peru coffee may be a darker roast but do not need to be. lighter or darker roast is dependent on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is partly due to the growing region and in part influenced from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are produced at lower elevations.
Both beans show a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee cultured:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield shrub but provides excellent qualities, typically quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75% of the coffee growing area is at an altitude range of 1000 to 1800 m.
