Typically, it is a mildly acid taste, light-bodied but tasteful and aromatic. Peru beans are considered a good blending coffee owing to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian coffee may be a darker roast but does not need to be. lighter or darker roast is dependent on the coffee roaster after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the farming area and in part impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatran, are farmed at lower elevations.
Both coffees exhibit a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield tree but provides excellent qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest are other varieties.
About 75 percent of the coffee cultivation area lies at an altitude range of 1000 to 1,800 m.
