Typically, a mildly acid cup, light bodied but tasteful & aromatic. Peruvian coffee are known as a good blender because of its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peruvian beans may be a darker roast but do not need to be. Light or dark roast depends on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is in part due to the cultivating region & partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are grown at lower elevations.
Both coffee beans show a simple and balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the dominant coffee farmed:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall & leggy low yield tree but provides high qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee farming area lies at an altitude range of 1000 to 1800 metres.
