Typically, a mildly acid taste, light bodied but tasteful and aromatic. Peruvian coffee beans are considered a good blending coffee due to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also grows respected wet-processed coffee. The best level is AAA.
Peruvian coffee beans can be a dark roast but do not need to be. lighter or darker roast depends on the coffee roaster after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the cultivating region & partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatran, are grown at lower elevations.
Both coffees show a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the primary coffee cultured:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield tree but produces great qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee cultivation area lies at an altitude range of 1000 to 1800 m.
