Usually, it is a mildly acid taste, light bodied but flavourful & aromatic. Peruvian beans are thought of as a good blending coffee owing to its pleasant but understated character. The Cuzco area, particularly the Urubamba Valley, also produces respected wet-processed coffee. The best grade is AAA.
Peru beans can be a dark roast but do not need to be. lighter or darker roast is dependent on the coffee bean roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the farming location and in part influenced from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatra, are farmed at lower elevations.
Both beans show a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy small yield plant but produces excellent qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75 percent of the coffee cultivating area lies at an altitude range of 1,000 to 1800 m.
