Usually, it is a mildly acid cup, light bodied but tasteful & aromatic. Peru coffee beans are considered a good blending coffee owing to its pleasant but understated characteristics. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peru beans may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is because of the cultivating region & in part impactged from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are grown at lower altitudes.
Both beans exhibit a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield plant but produces great qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75% of the coffee farming area is at an altitude range of 1,000–1,800 metres.
