Usually, a mildly acid coffee, light-bodied but tasteful and aromatic. Peruvian are considered a good blending coffee owing to its pleasant but understated characteristics. The Cuzco area, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The highest level is AAA.
Peruvian beans may be a dark roast but do not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing area & partly influenced from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatran, are farmed at lower altitudes.
Both beans have a simple yet balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall & leggy small yield shrub but provides excellent qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75 percent of the coffee cultivation area lies at an altitude range of 1000–1,800 m.
