Typically, it is a mildly acid cup, light bodied but flavourful and aromatic. Peruvian coffee beans are thought of as a good blending coffee due to its pleasant but understated character. The Cuzco region, particularly the Urubamba Valley, also grows renound wet-processed coffee. The best level is AAA.
Peruvian coffee can be a darker roast but do not need to be. lighter or darker roast depends on the coffee roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is partly due to the farming region & partly impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are produced at lower altitudes.
Both beans exhibit a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian beans.
Arabica is the dominant coffee grown:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall and leggy low yield shrub but provides high qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest being of other varieties.
About 75 percent of the coffee growing area is at an elevation range of 1,000 to 1800 metres.
